My contribution was peanut butter cookies dipped in Belgian chocolate.  Here’s the recipe. Cream together:

  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar

Add and beat well:

  • 1 egg

Stir together and add to above mixture:

  • 1 1/4 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt (especially good if you use coarse salt)

Cover and chill 1 hour. Use 1 Tablespoon of dough and make a ball.  Place on cookie sheet.  Flatten with a lightly floured fork. Bake at 350 for 10-12 minutes.  Cool 1 minute and remover from sheet.  Makes about 3 1/2 dozen. If dipping in chocolate.  Melt a big chocolate bar in a double boiler. If chocolate doesn’t melt nice and smooth, add a tiny bit of coconut oil or cooking oil, like 1/2 teaspoon or so and stir.  That should make it nice and smooth.  Don’t add too much or the chocolate will not harden up good. Dip away.
