Holiday treat magic

Because simple pleasures really are the best kind, the cookie swap is genius!! You show up with 5 dozen cookies you made and you leave with 5 dozen of the most fab assortment imaginable! It’s holiday treat magic!

My contribution was peanut butter cookies dipped in Belgian chocolate. Here’s the recipe.
Cream together:
- 1/2 cup butter
- 1/2 cup peanut butter
- 1/2 cup sugar
- 1/2 cup brown sugar
Add and beat well:
- 1 egg
Stir together and add to above mixture:
- 1 1/4 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt (especially good if you use coarse salt)
Cover and chill 1 hour. Use 1 Tablespoon of dough and make a ball. Place on cookie sheet. Flatten with a lightly floured fork.
Bake at 350 for 10-12 minutes. Cool 1 minute and remover from sheet. Makes about 3 1/2 dozen.
If dipping in chocolate. Melt a big chocolate bar in a double boiler. If chocolate doesn’t melt nice and smooth, add a tiny bit of coconut oil or cooking oil, like 1/2 teaspoon or so and stir. That should make it nice and smooth. Don’t add too much or the chocolate will not harden up good. Dip away.
