Richy rich chocolate muffins

These muffins are an attempt to offer a treat but also a sneaky little dose of fiber and an inkling of nutrition, but don’t say anything, you’ll ruin it for me! I hijacked the recipe from Sweet & Natural Baking by Mani Niall. SHhhh….These are whole wheat, eggless and sugar free. NOT sweet free, just not made with sugar sugar. I usally don’t mix healthy and sweets. When I want a sweet, I want a sweet. You won’t find whole wheat chocolate chip cookies in my jar. These aren’t gonna replace the brownie but as far as muffins go and for throwing in a lunch sack? Pretty good!

IMPORTANT TIP! Learn from my mistake. ;)
The muffin on the left looks like a hearty old fashioned trail biscuit. The one on the right has alotta vavoooom! That’s the one YOU want!
When you make muffins, be sure to fill the cups almost to overflowing with the batter. That way you get that famous muffin top everybody loves. I didn’t do that in the batch I photographed so I made another batch just to show you the difference. I would have re-shot the whole thing but I love how these pix turned out. So…you get the before and after!
