Tastes like pancakes only boysenberry (er)

I have always been a sucker for that boysenberry syrup at a pancake house. Maybe that was the inspiration for these boysenberry pancakes cuz they taste just like it! Chef Brad found out I was a fan of his Wonder flour. He sent me a bag of that and his Whole Grain Comfort Food cookbook to try. So, not only did I get a prize in the mail…I think I found a new pancake recipe! All I did was add boysenberries! Oh ya!!
- 1 1/2 cups spelt flour, I use Chef Brad’s Wonder Flour (I LOVE this stuff! A nice change from whole wheat.)
- 1 1/2 cups buttermilk
- 2 eggs
- 1/8 cup real maple syrup
- 1/8 cup oil (I use grapeseed or butter)
- 1/2 teaspoon salt
- 1 Tablespoon baking powder
- 2 handfuls of fresh boysenberries (Blueberries or any berry would work)
Add all the dry stuff in one bowl and the wet stuff (including berries) in another. Pour the wet into the dry and mix everything together with a wire whisk. Don’t over do it, just enough to moisten the flour mixture.
Of course top with way too much butter and maple syrup!

Sweet mother of pancakes, they look delicious!! Luckily I am in the mecca of pancakes right now (Russia) so I could probably find some within a 10 meter radius of my hostel if needed. But maple syrup?… not so much, sadly.

I think I shall have to plant some boysenberries in my backyard after all the posts about boysenberries and the yummy stuff you make with them. :D
You will love them. They only come on for a few weeks and once established they be no trouble at all. You do have to learn how to prune them which is easy AND go for thornless! happy day. k.
