Kimi Power Muffins

Kimi Power Muffins. If you’re thinking big sweet treat muffins these aren’t they! These are built for speed! To keep the motor clean and the engine burning! Power muffins are a breakfast on the run. This and my Good, Green Smoothie claim breakfast on many a day. I almost always have a bag of these in the freezer. Fiberlicious!

- 1 1/3 cup buttermilk
- 2/3 cup grapeseed oil, real butter or other good quality oil
- 6 extra ripe bananas
- 3/4 cup honey
- 2 teaspoons real vanilla extract
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 1/2 cups whole wheat flour – Try using different whole grain flours, I use Chef Brad’s Wonder Flour that I grind myself.
- 1 1/2 cups oat bran
- 1/2 cup ground or chopped almonds
Throw all the wet ingredients in a blender and stir the dry stuff in a big bowl.
Mix it all together, scoop into tins and bake. Done!
When bananas go brown, toss them into the freezer where they’ll stay til muffin day.
